Strawberry and feta summer salad: Strange but wonderful
My strawberry-feta salad is one of my all time favourite summer salads. Everyone I've made it for has at first been quite cautious and a bit weirded out, but after tasting it have been blown away. Feta and strawberries just work together, strangely, but satisfyingly. I'd say they are pretty much a match made in heaven and everyone should try this salad!
As most salads, you can mix and match and thrown in whatever ingredients you've got in the fridge. Avocados are perfect for this salad, but since I didn't have any, I just put in cucumber. Pretty much any nuts you have will work, but toasted sliced almonds and toasted or roasted hazelnuts go best with strawberries. I used cashew nuts as, you guessed it, that's what I had available. The most important thing in making this salad work is the feta-strawberry combination, and the sweet(ish) dressing, which uses balsamic vinegar, runny honey (or maple syrup, whatever's in the pantry) and olive oil in equal quantities. You can (almost) wing everything else.

Ingredients:
400g strawberries, chopped roughly
200g (1 packet) of feta cheese, crumbled
2 avocados, cubed
75g croutons
2 heads of romaine lettuce, chopped roughly (or use a 300-400g bag of baby spinach)
50g nuts, roasted hazelnuts/almonds best but any do, roughly chopped
25ml olive oil
25ml balsamic vinegar
25 runny honey / maple syrup
Method:
Chuck strawberries, feta, avocados, croutons, lettuce and nuts in a big salad container. Mix olive oil, balsamic vinegar and maple syrup (or runny honey) in a separate bowl to make the dressing. Taste to make sure that the sweetness of maple syrup takes away the edge of the balsamic vinegar. Pour the dressing over the salad, toss gently, and serve with a flourish of chopped nuts.
That's it. Super simple, super quick (I think it took me a bout 20 minutes to prepare and then 5 minutes to take pictures of it for this post...) and that's it. And I guarantee. The taste is fantastic!
